Little Snow Baby

I took Marné sledding for the first time today. She was pretty grumpy in the beginning, but by the end she was kneeling in the sled and clapping. She really enjoyed crawling around in the snow, and she looked darlin gin her little snowsuit and boots!

One Strong Woman

I just finished reading about an amazing woman named Amy. I have never met her. I have not read her blog until this morning. My, is she a strong woman! I learned about her at a wonderful blog called "The Secret is in the Sauce". It's a wonderful way to get to know other people, and I love participating. Reading about Amy has touched me more than any other blog I have read on SITS. Amy recently learned she has cancer. Amy's son Philip has been battling with brain tumors since he was born. Amy is strong, upbeat, cheerful, and full of faith. The best thing about blogs is meeting new people and sharing in their trials and triumphs and letting them know that there are so many people who care. People they have never met and probably never will. I wish Amy and her family the best.

Chicken Pot Pie on a Snowy Day

There's something about a cold, snowy day that makes you want to stay inside and bake. It has finally started snowing here. It's much later than usual, which I very much appreciated. It has snowed almost every day this week. Last night I made my first chicken pot pie for dinner. Don't be too impressed, I used store bought pie crust. I'm working my way up to making my own. I based the recipe on one from Pillsbury found here. I only used 1/4 C. butter and 1/4 C. flour. I also used 1 1/2 C. chicken broth and 3/4 C. milk. I used a frozen mix of peas and carrots and added a potato. I like potatoes in pot pies. I cut the potato and cooked it for a few minutes before adding to the filling mixture. I used the starchy potato water and chicken bouillon for the broth. I think it turned out pretty well. Spencer and Marné both enjoyed it. Next time I'm either going to double the filling and make it a deep dish pot pie or make it with just the crust on top. The crust on the bottom and top was a bit much. Oh, and I love chicken pot pie with cottage cheese. I know, it sounds weird, but give it a try. Something about the cold, creamy cottage cheese with the hot pot pie. Enjoy!
